Book Review: Be More Vegan by Niki Webster.

We were very kindly sent this gorgeous cookbook, 'Be More Vegan' by Niki Webster, from Welbeck Publishing, a few weeks ago and finally got the time this past weekend to whip up a couple of recipes from it. They turned out mouth wateringly amazing that we will definitely be making more!

Our Review.

First off, this is such a cute book and perfect for us. We love the size of it; easy to keep in the kitchen, doesn't take up too much room and doesn't have an overwhelming amount of recipes that you don't know where to even begin. So, first impressions = a big thumbs up!! Once we'd had a flick through it, we actually lent it to our Mum for a few days. We've all been going off a more plant-based diet this year and we knew straight away that she would love reading more about this kind of lifestyle and having a nosey at the recipes. We weren't wrong! She loved reading all the information about being Vegan that Niki has very helpfully included at the front. Mum specifically said that when we write about this book, we needed to mention how much she enjoyed reading this part! :) So, that's a huge thumbs up from our Mum too! 

All the information that Niki provides at the beginning of this book isn't all food related. Niki gives tips on how to bring Veganism into your every day life and she does so without being overwhelming or far fetched. She shares simple changes you can make to live a healthier more earth and animal friendly lifestyle and we found it truly inspiring. We have been making a lot of changes recently and had been stuck in some areas of knowing what we can do to be better and Niki answered many of those questions and concerns. 

Upon receiving 'Be More Vegan,' we also followed Niki on Instagram where she has a huge following and the most mouth watering pictures and recipes. We definitely recommend giving her a follow if you are foodies like us! But let's get to the recipes we tried! First up was this Pea and Avocado dip. It was super simple and just sounded like something we could quickly whip up and enjoy...and we did! It was so refreshing. We love all of the ingredients included, especially the mint, so this was delicious. We even spread it on our sandwiches one day for work and found it made a rather yummy sandwich filler too! The flavours all worked beautifully together and once we started dipping in our Pita bread, we couldn't stop.

Next up were the Falafel Burgers. We've experimented with a few chickpea burgers recently and while delicious, we struggled to get the right consistency. These however turned out great. They stayed together and didn't crumble and were incredibly tasty, really tasty. We devoured them in minutes. We should have doubled the recipe! We can see us making these a lot as our go to burger recipe! :) They were easy to put together, we didn't need too many different ingredients and they weren't time consuming if you don't have a whole lot of time to get something on the table. 

We're very excited to try out more of the recipes and are very impressed with 'Be More Vegan.' If you are looking to turn towards a more plant-based diet, or just want some scrumptious recipes packed with veggies, we highly recommend picking up a copy!
