Mangia: Gingerbread Muffins.

Having an American husband means that celebrating Thanksgiving is a must since it's a very big day over there. Some people say that their Thanksgiving day is bigger than Christmas Day! So, this year I cooked all of Chris's favourites and we had a meal with my family. I originally wanted to make Pumpkin Cupcakes, but would you believe that the American section in Tesco's didn't have tinned Pumpkin in stock!!? I'm certain I've seen it recently, but I left it too late and couldn't wait to see if they restocked next week! Anywho, that is why today's recipe is for Gingerbread cupcakes!

In all honesty I think I actually prefer Gingerbread. It's a traditional festive favourite and instantly makes me think of every wonderful Christmas thing ever: Cosy nights in by the fire, decorating Gingerbread houses, Gingerbread coffee's, Christmas carols etc. It's just a very festive treat, plus these made the house smell heavenly!

What you need:

1/3 cup of vegetable oil.
1/4 cup of brown sugar.
1 1/2 cups of s/r flour.
1/2 cup of golden syrup.
1 tsp of baking soda.
1 cup of hot water.
2 tsp of ground ginger.

What to do:

Pre-heat the oven to 180 degrees Celsius.

Whisk the sugar and oil together, then add the syrup.

In a separate bowl combine the flour, baking soda and ginger.

Alternate between adding a few spoonfuls of flour and a dash of water to the main mixture and mix to combine each time.

Bake for 30-40 minutes until golden brown or a knife comes out clean.

That's it! They were super easy to make and taste great. I used quite a bit of ginger so you really get all the gingerbread vibes  - it was like eating a gingerbread man!
