Mangia: Chickpea Burgers.

We have been making lots more vegetarian dishes as of late and this one in particular has been a request of our Mums for a while now. So last week I (Lucy) woke up feeling inspired and went into the kitchen to simply cook, have some fun and do what Grandad did best; make it up as I went along. 

I (Kelly) have to give props to Lucy for this recipe because I got to Nanna's house after work last week to find one of these delicious burgers waiting on a plate for me, courtesy of our wonderful mother who said I had to try it, it didn't matter that I was on my way to Luc's house to actually have them for dinner! Call it an appetizer! I didn't mind having more than one though because I was impressed, they turned out really good.

We did actually try to make them again at the weekend using a recipe from a magazine as we were interested to see what the difference would be... I voted Luc's worked best, so we hope you like them!

What you will need:

2 Cans of Chickpeas
2 Eggs

What to do:

Boil and cook your chickpeas and leave them to cool. 

In a bowl squash your chickpeas and add your eggs, salt, pepper and cumin and mix together. 

In a frying pan heat sunflower oil; enough to cover your burgers.

Make into small round patties, then dip into milk, flour and lastly the breadcrumbs. 

Fry on both sides until golden brown.
