Mangia: Banana, lemon and blueberry muffins.

Today's recipe is a twist on our go to Cinzano and Banana muffins. We were in the mood for something fresh and have been experimenting a lot lately with reducing sugar in recipes so they are healthier and better for our Nanna to enjoy.

As you may know, we are all about lemons so we wanted to see if lemon would work with a base of banana. We added blueberries as our sister loves blueberry muffins. If we do say so ourselves, they turned out rather scrumptious. They're very light and the blueberries added a lovely freshness. If you wanted to you could even add a teaspoon of lemon zest just so the lemon pops a little more.

What you need:

3 Banana's mashed
1/3 cup melted butter
1 egg
1/4 cup lemon juice
2/4 cup of sugar
1 tsp baking spoon
1/4 tsp salt
1 1/2 cups of flour
1 punnet of blueberries

What to do:

Pre-heat your oven to 180 degrees.

Mash your bananas in a mixing bowl and add your egg, lemon juice and butter and combine.

In a separate bowl combine your flour, salt, baking soda, sugar and blueberries.

Add your wet ingredients to your dry and mix together.

Place your cupcake cases in to your cake tin and then scoop 2/3 of the muffin batter in to each case.

Bake for 15 mins.
