Mangia: Limoncello Cheesecake.

Lemons might just be our favourite ingredient to cook with. We have probably mentioned it before but lemons simply remind us of Italy; having been fortunate enough to have grown up hearing stories about Nanna's childhood exploring the lemon groves of Italy and even having her own lemon tree in her garden as a kid. Not to mention receiving parcels from our Auntie's baring fresh Amalfi lemons nearly as big as our heads. We have previously shared a Lemon and Marsala recipe here on our blog, but today it's all about the lemon... 

...make that Limoncello, because when life hands you lemons, what else are you going to make? OK, so two things: Lemon Cheesecake and Limoncello and then you can combine the two.

What you need:

2 x 8oz packets of cream cheese
1/3 cup sugar
2 eggs
4 tsp lemon juice
1 tsp vanilla
2/4 cups of Limoncello

For the base:

250g digestive biscuits
100g melted butter
1 tsp lemon juice
3 tsp of finely grated lemon zest

What to do:

Place your digestives in a food processor, or a sealed bag and smash the biscuits with a rolling pin, until nice and fine and pour into a mixing bowl.

Add your melted butter, lemon juice and lemon zest.

Combine and place into your baking dish, pressing down so it is lovely and compact. Refrigerate while you make the delicious filling.

Pre-heat your oven to 180 degrees.

In a mixing bowl, mix together your cream cheese, sugar, vanilla and eggs until combined.

Add your lemon juice and Limoncello making sure to stir slowly after each addition.

Retrieve your base from the fridge and pour cream cheese mixture on top.

Bake for 40 mins. It should come away from the side and be slightly golden.

Allow to cool, then place it in the fridge for 3 hours before serving so it's scrumptious and chilled.

  2. This recipe sounds delicious, I definitely have to try to make it one day! And yes the lemons from the Amalfi Coast are HUGE, it's unreal!
