Mama O's Pumpkin Bread

Living in America for the past few years, we've become accustomed to the fact that Holidays are a HUGE deal. Yes, they may celebrate the same things as we do in the U.K but somehow they just do it bigger. So, when they say Autumn is the season of Pumpkin Spice everything, they ain't lying y'all!!
We find everything in the shops here, from pumpkin spice creamer, yogurts and bread to ice cream, cakes and cookies. It's literally everywhere we turn. With Thanksgiving not too far away, everyone prepares for afternoons of baking pumpkin pie, pumpkin bread and pecan pie, as is tradition. Families look forward to getting their yearly favourites from the family member who makes them best. In our family, Mama O (Lucy's Mother In Law) is known for her delicious Pumpkin Bread. So just last week I spent a morning with her making no less than 20 loaves!!!

How mean would I be if I didn't share the recipe with you!? Plus according to Mama O, she got it from an Italian lady when she lived in New York! Extra brownie points! :)

This recipe will make 2 loaves with 5x3 inch pans or 3 loaves with 8 1/2 x 4 1/2 inch pans.


2/3 cups of Shortening
2 2/3 of cups Sugar
4 Eggs
1lb can of Pumpkin
2/3 cup of Water
3 1/3 cups of Flour
2 tsps of Baking Soda
1 1/2 tsps of Salt
1/2 tsp of Baking Powder
1 tsp of Cinnamon
1 tsp of Cloves
2//3 cups of Chopped Nuts
2/3 cups of Raisins

What to do:

Pre-heat the oven to 350 degrees.

Grease whichever size loaf pans you have chosen.

Cream the shortening with the sugar, until fluffy.

Add the eggs and the water, then mix together.

Add the can of Pumpkin and combine.

In a separate bowl, mix the spices, salt, baking powder and baking soda with the flour.

Carefully add a little flour at a time to the pumpkin mixture and mix together.

Fold in the raisins and nuts.

Pour into your prepared pans and bake for about 70 minutes or until a toothpick inserted into the center comes out clean.
