Lemons make us happy. When we were babies we would happily munch on lemons while in our high chairs and we remember crying when someone took them away. When we got older we loved nothing more than listening to our Nanna tell us stories from her youth, where she would run around her garden at home in Italy and pick the lemons, lemon's as big as our heads. And, you can bet we have grown up sipping on Limoncello. There was, and is, always a bottle in the cupboard at Nanna and Grandad's house, so when in Rome...
The most amazing Limoncello we have ever tasted was when our Auntie Angela bought homemade Limoncello back from Italy that our Aunties had made. Oh my goodness, it was divine. It was rich, sweet and silky smooth and incredibly refreshing. We'd never made it ourselves, until now, because we thought it must be complicated or tricky to do. We couldn't have been more wrong. Making notes from the Limoncello tea towel that Nanna gave us that bares the recipe, a few weeks ago we set to work on making Limoncello for the very first time. You know there were plenty of squeals involved during the entire process.
Ingredients:
2 Lemons
100ml Vodka*
100ml Water
1/4lb of Sugar
What to do:
Pour Vodka into a glass jar.
Wash Lemons thoroughly. Peel the rind from both Lemons and place into Vodka. Be careful not to get any of the white pith of the rind, this will make the Limoncello bitter.
Place lid on Jar or cover securely with cling film.
Leave for a week or longer. The longer you leave it, the more the Lemons will infuse into the Vodka.
In a saucepan, dissolve the sugar into the water. Mix and leave to cool slightly for 10 minutes.
Pour your sugar and water mixture into your Vodka. Then filter it into a bottle.
Keep refrigerated. Limoncello is served best molto freddo! :)
*We used 40% proof but some recipes call for stronger. In our opinion, this Limoncello taste great and we liked that it wasn't too strong.

This is such a cool recipe! I had a chance to try limoncello from this little place on a mountain in the south of Italy and everyone around me was trying it, but for some reason I didn't and I've been kicking myself about it ever since!
