Lemon and Marsala Cheesecake!

We have been on a roll with baking lately, you just can't get us out of the kitchen. We think Nanna and Grandad are pretty proud of us, as every few days we tell them about something we have whipped up, be it a family recipe we are working on perfecting or a new Italian recipe we just have to try.
Last week, after making something delicious and lemony, that we will be sharing with you soon, we still had a bunch of lemons leftover and had a craving for cheesecake.

Lemon is one of our favourite flavours, especially during the Summer season. So with Summer in full swing here in Florida and by the sounds of it, back home in England too, our minds have been swirling with all sorts of lemony ideas. The first up on our Summer time menu, to satisfy our Cheesecake craving, is this Lemon and Marsala Cheesecake. You know we're just like our Nanna so couldn't resist adding the Marsala. Here's what you will need:


For the filling:

2 x 8oz cream cheese.
1/2 cup sugar.
1 tbsp lemon zest.
2 tbsp lemon juice.
1/2 tsp vanilla
2 eggs.

For the crust:

1/2 cup of butter melted
10 graham crackers
1/4 cup of Marsala

 How to:


1) Crush Graham crackers.

2) Melt butter and add to crushed graham cracker mix. 

3) Add Marsala and then press crust mixture in to greased pie dish. 

4) Chill in fridge while you make your filling.

5) Pre-heat oven to 350 degrees. 


1) Mix your cream cheese, sugar, lemon rind, lemon zest, lemon juice and vanilla till smooth.

2) Add eggs one at a time and mix after each addition. 

3) Pour into crust and bake for 40 mins. 

4) Leave to cool and then refrigerate for 3 hours before serving. 

How pretty does this cheesecake look? It's so fresh and summery and makes us so happy. We are not ashamed to admit that between Kelly, my husband and myself, we devoured it in two days! Yes the entire cheesecake was no more within two days!!! It made for the perfect afternoon treat with coffee but also went superbly well with a small glass of wine on a sunny evening.
