Foodie Friday! :)

We love food. There are not many foods that we don't like. Our ultimate favourite food, however, would have to be Italian food. No questions asked, Italian food is everything to us. Italian food has a way of making us forget where we are, who is around us and how one should act in public. It causes us to squeal with glee, jump up and down on the spot and smile so big that the Cheshire cat has nothing on us.
As was the case this past Saturday. We were going about our usual shopping trip around Kroger when out of the corner of our eyes we spotted them, the cutest little potted plants, that looked just liked the ones our Mum buys for Nanna and Grandad from Tesco, and that was it. We ran up to these beautiful little things, all caution thrown to the wind, squatted to look at all the names, though the aroma's gave them away, as we took in deep breaths sniffing the leaves and taking it all in. Right away we scooped up the Basil plant and the Mint plant and heaven became a place on earth!

We don't think Italy can lay claim to these herbs and in actual fact we researched that Basil is native to Asia. But along with Parsley and Rosemary these are staples in our Nanna and Grandad's kitchen and one whiff and we are transported there. Our Grandparents house has everything, cherry trees, plum trees, a fig tree, tomato plants and every type of herb. We love that when they are cooking they wander over to these gorgeous plants and pick the fresh leaves. It most definitely adds that special touch to the food and makes what ever they are cooking taste even more wonderful.

When we moved into our own apartments, 4000 miles away from home, cooking became a huge deal to us. One because we couldn't just walk over to Nanna and Grandads for breakfast, lunch and dinner or enjoy Mum's delicious dishes and two, it comforted us to be able to make what we missed and think about our family. 7 years later and we feel we have perfected many a recipe, yet we're still learning. Our passion for food is ignited every time we see and hear how happy our Grandad gets when we tell him we've just whipped up some homemade meatballs! :)

In honor of our treasured purchases this weekend, today we bring you three recipes that we made over the weekend inspired by the wonders of our Mint and Basil plants. :)

Don't they just look so pretty?! :)

A Grandad inspired salad! :)
Olive oil

Simply dice each vegetable and throw everything in to a bowl. Roughly break the bread into pieces with your hands and add to the bowl. Drizzle with olive oil and a sprinkle of salt and pepper and you are good to go! :) It really is that easy and it tastes out of this world. Grandad usually just has tomatos and bread drizzled with olive oil and he sometimes adds potato, so we have just been experimenting! It is our favourite salad ever! :)

Banana, Mint Smoothie!
Upon waking up Sunday morning, we felt in the mood for a healthy breakfast smoothie. We thought what could be more refreshing that mint? It's good for you too!
Ingredients! (for one)
1 banana
2 tablespoons of greek yogurt
a scoop of ice
a drizzle of chocolate sauce
2 mint leaves for smoothie
mint leaf to garnish
Blend away in your blender and enjoy! This was simply divine and so refreshing. It's definitely in the recipe book for a relaxing weekend breakfast.
Tomato Sauce with Basil!
We have to admit with this one that we cheat. Nanna and Grandad make their own sauce and it has been on our list for forever to make. It is easy peasy and we have seen it done a million times but we have yet to try it. Watch this space. Here we just used canned tomato sauce from the grocery store and added a bunch of basil leaves for the fresh flavor as well as Olive Oil and salt and pepper! :)
We hope you enjoyed this recipes and give them a try yourself. We promise you won't be disappointed!
Keep smiling and have a beautiful day!
