Simple Sweetcorn Fritters!


We feel like we probably say this a lot, but if we could sum up our childhood in a dish there's a 99.9% possibility that we would say this one. The squeals it elicited are second to none...but then again, we don't think there's a dish that Nanna and Grandad prepared for us that didn't have us jumping for joy, doing some sort of odd dance move or making some high pitched noise.


Corn Fritters.


These corn fritters are so unbelievably simple but they taste AMAZING! One foot in our Nanna and Grandad's door and we could smell the scrumptious smell of these being plated up for us in the kitchen, while Nanna finished frying up the last few. We don't think the plate ever actually made it to the table, as we would run straight into the kitchen and eat them with our hands.Vultures we were, vultures!!! 

Ingredients: for 4 people:


1 can of Sweetcorn. (The bigger can.)
2 Eggs
1 - 1 1/2 Tbsp Flour.
Salt and Pepper.

What to do:


Place all the ingredients in a mixing bowl and mix together. 

Heat up a medium sized frying pan with a tsp of olive oil or butter. 

Then use a tbsp or a serving spoon to drop circles, think the size of those small Tesco pancakes that you can toast, in your pan. Cook on both sides until nice and golden.

And that's it. Sweet and simple and incredibly delicious!

  3. Do you use regular sweet corn or cream style sweet corn?

    1. We use regular sweetcorn. Not a fan of cream style sweetcorn to be honest!
