Banana and Cinzano Muffins.

Our favourite cake growing up was the one our Mum would make us for our birthday. She would make two, and write our names on each one with writing icing. They were the cutest things and we absolutely loved them. Want to know her secret ingredient?


CINZANO! Yep, we may have been five, but Mum made our birthday cakes with a generous amount of Cinzano wine! Italians hey! This was her substitute for butter, which meant in her mind the cakes were 'fat free.' Have we mentioned before how much we LOVE our mother?! :p

Butter or no butter, we devoured our cakes. So, when making banana muffins on Monday night, we decided to do our own bit of substituting and swapped vanilla for cinzano, last time we used Sambucca! These muffins are super easy to make. They don't require lots and lots of ingredients and they bake in 20 minutes. Plus, the cinzano makes them extra fluffy, moist and delicious!

What you will need and what to do to make 12 muffins:

Ingredients:

3 banana's mashed
1/3 cup melted butter
1 egg
3/4 cup sugar
1 tsp baking soda
1/4 tsp salt
1 1/2 cups flour
1/4 cup Cinzano (and a few extra tablespoons)

Pre-heat oven to 175 degrees.
Mash banana's, we simply did this with a fork, add all your remaining ingredients leaving flour till last. 
Whisk together until combined. 
Fill cupcake cases to about 3/4 full and bake for 20 minutes. 
Leave muffins to cool for 5 minutes and transfer to a wire rack.

With 1/4 cup of Cinzano you get a subtle Cinzano flavor, but if you take a leaf out of our Mum and Nanna's book and add half the bottle it's more prominent and extra tasty. Alternatively, one little tip we can suggest for getting that bolder flavour is drizzling a little cinzano on the top of your muffins with a pastry brush before serving. That way you get the full flavour of the wine without the baking process taking anything away! :)
