Pan Di Stelle Cheesecake,



We've talked on here a lot about our favourite Italian foods, cakes and produce, yet we feel there is one biscotti that we haven't quite done justice. That being Pan Di Stelle. Considering how much we absolutely adore this biscotti, we are quite shocked at ourselves. We first enjoyed this scrumptious treat when we visited our family in Praiano when we were thirteen. We went to see a lady who lived above our Auntie and she bought out a bag of these cookies for us to nibble on while she caught up, chatting with our Mum. It was love at first bite...seriously.

These days we still let out a gasp of excitement whenever we get sent a parcel and find these inside or when we find them in a shop, be it actually in Italy or here in the UK, what can we say? It doesn't take much.

We're ashamed to say that we haven't done much baking recently, but with Christmas just round the corner, we wanted to get a little festive and thought what better way than to try our hand at an Italian dessert made with something the whole family love. Nanna always gets a kick out of our love of Pan Di Stelle and smiles that we still remember visiting her neighbour all those years ago. So, without further ado, here's our recipe for:

Pan Di Stelle Cheesecake!
                            


Ingredients.

For the filling:

2 x 8oz cream cheese.
1 tbsp vanilla (Give or take)
1/2 cup sugar.
2 eggs.

For the crust:

1/2 cup of butter melted
18 (roughly) Pan Di Stelle Biscotti

How to:

Crust:

1) Crush the Pan Di Stelle biscuits.

2) Melt butter and add to crushed Pan Di Stelle mix. 

3) Press crust mixture in to greased pie dish. 

4) Chill in fridge while you make your filling.

5) Pre-heat oven to 175 degrees (U.K temp) 

Filling:

1) Mix your cream cheese, sugar and vanilla till smooth.

2) Add eggs one at a time and mix after each addition. 

3) Pour into crust and bake for 40 mins. 

4) Leave to cool and then refrigerate for 3 hours before serving.

5) We would recommend putting the biscuits on top just before serving, so they don't soften in the fridge.
