A bite of Sunshine.


When walking around the grocery store the other day I had the sudden urge to want to buy something I never usually buy and learn how to cook it. Do you ever do that? I felt like it had been a while since I just picked something up and experimented. As you know, Kelly and I love food, but there are tons of recipes and lots of delicious meals that I see on Pinterest or order at a restaurant, that I have yet to try out at home. So, my produce of choice on that fine day to experiment with... Plantains.



Since not counting macro's I have been craving certain foods that I didn't really get to eat at the end of last year, of course I could have fit them in to my macro's but I had simply gotten in to a routine and just never had them in the house. One of those foods was granola. I love granola and could just nibble at it all day, but it's very rare I buy it as I'm not big on having cereal in the morning. However, I was in the mood for something fresh and when Kelly and I needed a snack for our girlie movie night, we decided on granola and Greek yoghurt. Furthermore, staring at the plantains I had bought, I thought they would make a scrumptious addition to add on top.


Whenever we go out to eat and I get plantains I always get so excited as they taste so good. I love that I now know how to cook them, they are so simple to make too. All I did was heat 1 tbsp. of coconut oil in a pan, slice the plantain, sprinkle them with a touch of sugar and lots of yummy cinnamon and cooked them on both side until they were nice and soft, but a touch crisp on the outside and golden. Then we placed our Greek yoghurt in a bowl, around 1 cup, topped it with some Kashi granola and placed the plantains on top and that's it. Easy peasy and the perfect fresh and fruity snack for munching on while watching a bright, happy movie.


Our movie of choice...'Walking on Sunshine'. I know guys, the movie soundtrack has been playing non stop since Boxing Day and we have been talking about it a whole lot, and yes, now we have the movie, that doesn't show signs of slowing down. You might be hearing us going on about it for a few more months yet. We can't help ourselves, it's just so happy and fun and Italian! :)
