Baking collaboration with The Cupcake Chronicles.


When we came across Lindsay and Lauren, The Cupcake Chronicles, on Instagram we were immediately obsessed with their page. The most delicious looking cupcakes and mouthwatering ice cream jumped off the screen and we felt beyond inspired to head to our kitchen and whip up some such delights. In addition, we have to admit that we were very excited upon finding other twins who love cupcakes as much as we do, and who also blog. :)
We got in touch with Lindsay and Lauren with the idea of doing a collaboration with them, as we wanted to step up our game and get creative. It's so much fun bouncing ideas off other people. We all came up with the idea of a Fall themed collaboration to welcome the first day of Fall, (which was yesterday) so The Cupcake Chronicles chose to experiment with Pumpkin, while here, on Sweet is always in Style, we chose to challenge ourselves with something Apple. :) Please go and check out The Cupcake Chronicles to see what wonderful Pumpkin recipe they came up with.


Our minds were whizzing with ideas of what to make using Apple. After a little deliberation we smiled and thought about what Fall and Apple treats make us think of. Ultimately the thing that made our hearts happy was thinking about our Nanna's homemade apple crumble and her baked apple recipe. Therefore, we wanted to try a recipe that would be close to home and called on a cookbook we remember our Mum using when we were little. Mum got said cookbook as a wedding gift thirty-five years ago and we always get excited when she gets it out of the cupboard to make us pancakes or Yorkshire puddings. Flicking through the pages, our little sister, Jen, found the perfect recipe for us to try, an apple spiced cake.


We tweaked the recipe a tad, as we wanted to put our own twist on it, and we replaced walnuts and raisins with white chocolate chips as we thought white chocolate would pair nicely with the apple and warm spices...and you can't go wrong with a bit of chocolate. In addition, we created our own white chocolate and cream cheese spread that turned out rather scrumptious, if we do say so ourselves! We are so happy with how it turned out and have to admit that it was gone within a couple of hours, we couldn't stop eating it. It made the perfect nibble to accompany a cup of tea or coffee.


What you will need:
Cake
2oz butter
6oz brown sugar
1 tsp. ground allspice
2 tsp. cinnamon
10oz thick unsweetened apple puree 
1 tsp. baking powder
8oz flour
1 cup white chocolate chips

Spread
4oz cream cheese
1 cup white chocolate chips
sprinkle of cinnamon

What to do:
Cake
Preheat oven to 350 degrees F
Cream the butter and sugar together until fluffy
Beat in spices, apple puree, flour and baking powder
Fold in chocolate chips
Spoon into a well greased loaf tin
Bake for 1 hour or until a knife inserted into the center comes out clean

Spread
Melt white chocolate chips in the microwave
Combine with the cream cheese
Sprinkle in your cinnamon
Fold together with a spatula, scraping the sides of mixer.
